Hi y’all, I’m Courtney and this is my food blog, The Conscious Cashew. I’m an Austin, TX based educator by day and amateur vegan chef by night.
My love of food has been present my entire life. However, growing up in Texas, my food was always centered around meat. It wasn’t until I was in my early 20’s that I began to dabble in vegetarianism. This time in my life didn’t pan out to be permanent. Maybe I wasn’t mentally ready for the excitement and change that comes with a meat-less diet, I’m not sure. In March of 2017, I adopted a vegetarian diet again which would lead to veganism just a couple of months later. I have had the best time discovering flavors and ingredient combinations, as well as educating myself on a vegan life-style.
I’m happily married to my husband, Caegan, and we have two of the greatest rescue dogs, Molly and Cam. My husband is also vegan after graciously listening to my many ramblings about my new vegan discoveries and being the guinea pig for my vegan recipes.
I wanted a place where vegans, new and veteran, could come together and encourage and learn from one another. Veganism is a wonderful gift to ourselves, our world, and our future. Becoming vegan is a process. It doesn’t happen overnight, and there are no perfect vegans. However, I hope this blog will be a place where we can be gracious towards one another in our conversations and education.
